2023 Veleta Extra Virgin Olive Oil
Distinctive Spanish EVOO made from the rare Lechin de Granada olives. Our Olive Oil is handmade at Dominio Buenavista in Ugijar, Granada, Spain. Our olive trees are hundreds of years old and must be hand picked never machine harvested. We harvest and are processed within 2 hours of harvest. Veleta olive oil is made in a clean, modern technique to assure the highest quality olive oil. It is unfiltered and decanted one to two months before bottling. Sediment in the bottle is normal and does not detract from the quality of our oil.
Tasting notes: Smooth buttery sensations, with hints of herbs and mountain grass. It contains a slight grip but has no harsh notes or raspy qualities. An elegant Extra Virgin Olive Oil suitable for dipping alone or with herbs, base for all types of cooking, excellent replacement for butter on corn on the cob, baked potatoes, salad or in your favorite recipes. Taste is clean and fresh!

Reserva Sherry Vinegar DOP

Sherry Vinegar is a key ingredient in Spanish cuisine. Made from one of Spain's top Sherry vinegar producers selected and privately labeled for Veleta. Certified by Vinagres de Jerez and aged a minimum of 6 years in the famous Solera blending process. This assures uniform aging and consistent flavors.
Sherry vinegar (Spanish: Vinagres de Jerez) is a gourmet wine vinegar made from Sherry. It is produced in the Spanish province of Cádiz and inside the triangular area between the city of Jerez de la Frontera and towns of Sanlúcar de Barrameda and El Puerto de Santa María, known as the "sherry triangle".
In Spain, to be designated and named Vinagre de Jerez, by law the Sherry vinegar must undergo ageing in oak barrels for a minimum of six months, can only be aged within the "sherry triangle".
Sherry Vinegar is used extensively in both Spanish and French cuisine. In 2008 France was the largest market for sherry vinegar. In Spain, Sherry Vinegar is used in Gazpachos, and other cold soups as well as a garnish for stews such as cocido or lentils, used on salads or and accompaniment to tapas. Sherry Vinegar is also used to add zest and subtle nuances to sauces and dressings. Vinaigrette made from Sherry Vinegar is particularly flavorful compared to vinaigrette made from standard wine vinegar and pair well with an array of your favorite recipes.

Made from aged Pedro Ximenez and select wines using the Solera Process.
Gourmets of Spain sources this fine vinegar from the famous artisan producer, Vinagres de Yema in Jeréz de la Frontera for our personal collection. This inviting vinegar is a blend of barrel aged sherry vinegar and sweet Pedro Ximénez wine vinegar.
After the grape harvest, winemakers in the Southwest Spain place the Pedro Ximenez grape clusters on esparto mats to bask in the hot Spanish sun. Carefully retaining a perfect balance of rich juice in the grapes but also gaining intense concentrations of flavors which is further enhanced by aging in oak casks. The result is a mildly sweet vinegar with a dynamic and complex flavor. Deep amber color and a rich vibrant bouquet.
This aged vinegar has flavors of vanilla, sun-dried grapes and licorice. Ideal for dressing fresh greens or as a marinade for grilled chicken or vegetables. It is also the perfect addition to your favorite tomato-based sauces as it provides a tangy sweetness and deep complexity.

Veleta Moscatel Vinegar

Veleta Balsamic Vinegar of Modena

This precious balsamic vinegar arises from Modena, Italy. Trebbiano grapes are picked at their peak ripeness and the must that is obtained is then left to ferment in open top vessels and then aged in attics for years.
Veleta Balsamic Vinegar of Modena IGP offers a rich, complex sweetness that bursts in the mouth with notes of fig, molasses, dark chocolate, tart cherry, and dried green plums. Our Veleta Balsamic Vinegar of Modena IGP has nuances of toasted oak aromas and a slight hint of smokiness. It has a delicious mellow tartness and refreshing acidity.

Solera is a process for aging vinegar by fractional blending in such a way that the finished product is a mixture of ages, with the average age gradually increasing as the process continues over many years. All of the Veleta Sherry Vinegars are produced using this Solera process.
This ageing method involves a constant cycle of blending which gives the finished vinegar a complex aroma and long-lasting nutty flavor.
With vibrant, deep colors indicative of the slow, unhurried ageing in oak casks over many years. The characteristic acidity of all these vinegars have been mellowed with slow maturation and offer an exciting spectrum of flavors.
