Sherry vinegar (Spanish: Vinagres de Jerez) is a gourmet wine vinegar made from Sherry. It is produced in the Spanish province of Cádiz and inside the triangular area between the city of Jerez de la Frontera and towns of Sanlúcar de Barrameda and El Puerto de Santa María, known as the "sherry triangle".
In Spain, to be designated and named vinagre de Jerez, by law the Sherry vinegar must undergo ageing in oak barrels for a minimum of six months, can only be aged within the "sherry triangle" and must have a minimum of 7 degrees acidity. Most Sherry Vinegar is aged using the same solera system as the Sherry wines and Brandy de Jerez.
Sherry Vinegar is used extensively in both Spanish and French cuisine. In 2008 France was the largest market for sherry vinegar. In Spain, Sherry Vinegar is used in Gazpachos, and other cold soups as well as a garnish for stews such as cocido or lentils, used on salads or and accompaniment to tapas. Sherry Vinegar is also used to add zest and subtle nuances to sauces and dressings. Vinaigrette made from sherry Vinegar is particularly flavorful compared to vinaigrette made from standard wine vinegar and match well an array of your favorite recipes.

Veleta Sherry Vinegar al Pedro Ximénez is slightly sweet as a result of its ageing with Pedro Ximénez wine. It is the sweetest of our vinegars, however, despite its sweetness, its elegant acidity still comes through. It goes particularly well with sweet and sour dishes and it can be used in more robust dishes. It is perfect for caramelising onions. Thanks to its organoleptic characteristics, the Veleta Pedro Ximénez Reserve Vinegar pairs especially well with meat dishes, cheese-based salads, reductions and desserts.

Veleta Sherry Vinegar al Mosactel goes particularly well with salads and dressed dishes that contain fruit and citrus fruits. It’s golden color will add a bit of brightness to your fruit salads and its slightly sweet flavor combined with its marked acidity will give your dishes somewhat of a subtle yet elegant acidity. Moscatel vinegar has highly perfumed aromas and a sweet taste. It is made from a mixture of Moscatel and Palomino grapes. It is perfect to accompany meats, sauces and salads.

Veleta Balsamic Vinegar of Modena is obtained by the blending and consequent fermentation of concentrated grape must with aged wine vinegar. You will experience a rich, complex mildly sweet vinegar that explodes in the mouth with notes of figs, molasses, cherries, dark chocolate and prunes with a slight smoky aroma.
