Morcilla is one of Spain's favorite sausages. This Asturian version, seasoned with onions, clove, and black pepper, is a key ingredient in the iconic white bean stew, fabada asturiana. It's also enjoyed grilled or pan-fried , served with bread, or sauteed w/ eggs for breakfast. In the South of Spain, it is included in the typical Plato de Alpujarra with morcilla, chorizo, patatas al pobre and a couple of fried eggs. It freezes nicely, so feel free to stock up!
